    Food Safety Levels 2 and 3

    The aim of this qualification is to provide candidates with knowledge of the basic food safety practices that are essential in the food catering, retail and manufacturing industries. This includes the hazards and risks to food safety presented by food operations and personnel together with cost-effective, practical control measures.

    This course is available as either a Highfield Accredited course or non accredited.

    The Level 2 Award

    Duration: 1 Day

    Provides candidates with knowledge of the basic Food Safety practices that is essential in the food catering, retail and manufacturing industries.

    Assessment & Certification

    Each delegate will need to successfully complete a multiple-choice examination paper to gain the qualification.

     

    The Level 3 award

    Duration: 3 Days

    Developed to provide a thorough understanding of Food Safety procedures emphasising the importance of monitoring staff and control measures.

    Designed for those who are involved in managing or supervising any type of food or drink processes within a catering facility.

    Course Content

    The Level 3 Award in Supervising Food Safety in Catering covers the following areas:

    • Legislation
    • Applying and monitoring good hygiene practice
    • Temperature control
    • Workplace and equipment design
    • Waste disposal, cleaning and disinfection
    • Pest control
    • Personal hygiene of staff
    • Contribution to staff training
    • Implementation of food safety management procedures
    • Food safety management tools Understand how food business operators can ensure compliance with food safety legislation
    • Understand the application and monitoring of good hygiene practice
    • Understand the role of the supervisor in staff training

    Assessment & Certification

    Each delegate will need to complete a multiple choice examination paper and an assessment to gain the qualification and certificate.
